Vegan pancakes with Chocolate & Goji Berries

About the Recipe

Delicious and easy recipe for pancakes that can be prepared in advance and stored frozen.

Ingredients

  • 300g wholemeal flout

  • 1 tsp baking powder 

  • 2 tbsp erythritol 

  • 1 tsp natural vanilla 

  • 400ml vegan milk (such as oat, almond or soya)

  • 1 tbsp coconut oil for cooking

  • 1 tub of Coppa della Maga Chocolate & Goji Berries

Preparation

Step 1

Whisk all dry ingredients.


Step 2

Slowly pour in the milk until you get a smooth, thick batter.


Step 3

Heat a little of the coconut oil in a non-stivk frying pan over a medium-low heat, and add 1 tbsp batter into the pan at a time to make small, round pancakes. Cook for 3-4 mins until the edges are set, and bubbles are appearing on the surface. Flip the pancakes over and cook for another 2-3 mins until golden on both sides and cooked through. 


Step 4

Serve on stack with a large scoop of Chocolate & Goji Berries ice cream and decore with a few berries.
