Ice cream cake with pistachio and cherry

About the Recipe

Delicious ice cream layers over chocolate biscuits, topped with chocolate and fresh berries.

Ingredients

1. 100g chocolate biscuits

2. 20g of butter or coconut oil

3. 1 tub of Coppa della Maga Pistachio

4. 1 tub of Coppa della Maga Cherry & Cream

5. 20g of dark chocolate

6. Fresh berries

Preparation

1. Take out of the freezer the 2 tubs of Coppa della Maga to let tem soften;

2. Crush the biscuits into small pieces;

3. Melt in the microwave the butter or coconut oil and add to the biscuits;

4. Continue crumbling them by hand or in a blender until you get a homogenous dough-like mixture;

5. Transfer the mixture into a baking form and press to form the bottom part of the cake; put in the freezer for 5 min;

6. Take out the baking form, scoop on top of the biscuits the tub of Coppa della Maga Pistachio and smooth even the surface with a fork; Put in the freezer for 5 min;

7. Repeat the above step with the tub of Coppa della Maga Cherry & Cream;

8. Melt in the microwave the chocolate;

9. Take the cake out of the freezer, decorate with the melted chocolate and fresh fruit and serve immediately.
