Easy vegan home baked cookies

About the Recipe

Delicious home made vegan cookies of wholemeal flour and no added sugar. You can pre-bake them and enjoy later during the week as a healthy breakfast or enjoy them with ice cream, as we did!

Ingredients

  • 160g wholeamel flour

  • 100g coconut oil

  • 80g erythritol

  • 2tbsp freshly grated ginger

Preparation

  1. 1. Mix all ingredients 

  2. 2. Knead the dough by hand and put in the the fridge for 5 minutes to allow the coconut oil to harden

  3. 3. Take the dough out of the fridge and roll in on a flour disted counter

  4. 4. Cut out the cookies

  5. 5. Bake them in a oreheated oven at 160C for about 20 minutes
