About the Recipe
Delicious home made vegan cookies of wholemeal flour and no added sugar. You can pre-bake them and enjoy later during the week as a healthy breakfast or enjoy them with ice cream, as we did!
Ingredients
160g wholeamel flour
100g coconut oil
80g erythritol
2tbsp freshly grated ginger
Preparation
1. Mix all ingredients
2. Knead the dough by hand and put in the the fridge for 5 minutes to allow the coconut oil to harden
3. Take the dough out of the fridge and roll in on a flour disted counter
4. Cut out the cookies
5. Bake them in a oreheated oven at 160C for about 20 minutes
